Speedy Breakfast
After reading Mariel Hemingway’s excellent book Healthy Living from the Inside Out, her morning shake — made with a vegan twist — became one of my favorite speedy vegan breakfast recipes. Since then, morning shakes have temporarily fallen out of favor with me for warmer winter food choices, but next summer — or if I get a craving for blueberries this winter — I’ll be back to the blender for this quick, uber-healthy treat.
Mariel Hemingway’s Morning Shake With a Vegan Twist
1 scoop Vega (or other vegan) protein powder.
1 scoop flaxseed powder
1/4 c. frozen blueberries
1 c. almond, soy or rice milk to smoothness (she uses water, but that was not creamy enough for me)
ice
(she also uses 1/2 stevia packet, but stevia is too sweet for my palate)
1. Place the liquid and some ice into a blender.
2. Add powder, flaxseed and blueberries
3. Blend on high.
Hemingway also recommends pouring it over fresh berries, organic coconut and a handful of toasted plain almond slices for a spoon-eating kinda morning. But there’s nothing better than breakfast in a glass when your Monday’s a speedy one.
